Located in the majestic Gassac Valley, the estate benefits from the cool microclimate derived from the Gassac River, several natural springs (from which the Guibert family drinks), and the influence of the nearby mountains. The soil that dominates the valley is a rare and still unexplained red, powder-fine glacial soil, which is strikingly similar to that found in the prime areas of Burgundy. Kimberly Hatcher, a San Francisco firefighter by day and winemaker by night, is a force to be reckoned with. In 2009 she got into wine working as an assistant to Napa Valley’s acclaimed winemaker Russell Bevan and was hooked ever since. In 2012 she released her first vintage of Morgado Cellars. Recently wrapping up her 8th harvest, Morgado makes rich wines with supple textures that are absolute crowd pleasers. Producing Pinot Noir, Chardonnay and Bordeaux – crafted by hand and made from the heart – Morgado is a force of nature. We are honored to welcome guest chef Justin Cogley of Aubergine at L’Auberge Carmel this November for one weekend only.
Chef Anderson and Chef Cogley both known for their uses of hyperlocal wild and cultivated ingredients will create a menu featuring the ingredients of Coastal California and Central New Jersey. The late fall menu will showcase west and east coast shellfish, foraged vegetables and locally raised meats.
Justin Cogley joined Aubergine restaurant in January 2011. As Executive Chef he oversees Aubergine and all of L’Auberge Carmel’s culinary programs.
Cogley comes to Carmel by way of Chicago, Illinois, where he was instrumental in opening the Elysian Hotel’s new kitchen as Executive Sous Chef. He previously worked at Charlie Trotter’s critically acclaimed restaurant for four years, claiming the position of Chef de Cuisine for the last two. As such, he was responsible for menu creation, special events, and extensive instruction and management of the culinary staff.
Under the direction of Chef Cogley and his team, Aubergine has enjoyed substantial acclaim. In early 2015 they were nominated for three James Beard Foundation awards including Best Chef, West. 2014 saw Aubergine earn Wine Spectator's Best of Award of Excellence and Forbes Travel Guide’s highest Five-Star rating recognizing excellence in restaurants. Also in 2014 L’Auberge Carmel was named Travel + Leisure’s World's Best Awards as a Top 100 Hotels Overall and one of the Top Resorts in the Continental United State.

Finalists Announced for 2018 Garden State Culinary Arts Awards - Cargot & elements Nominated!

Chefs and restaurants, farmers and food artisans, professionals in wine, beer and spirits, specialty food markets and legends in all things culinary in New Jersey have been named finalists for the 2018 Garden State Culinary Arts Awards (GSCAA).
The awards will be presented by The Garden State Culinary Arts Foundation in a ceremony and reception to be held from 5:30 to 9 p.m. on Sunday, April 29 at Bell Works, 101 Crawfords Corner Road in Holmdel.
Following an official welcome from the foundation, the awards ceremony announcing the winners will begin at 6 p.m. on April 29. A gala reception, with dishes that focus on New Jersey ingredients, will follow from 7:15 to 9 p.m. under the direction of 2017 Outstanding Chef winner Drew Araneo, of Drew's Bayshore Bistro in Keyport, and 2017 Rising Star honoree AJ Capella, formerly of the Ryland Inn, Whitehouse Station. Students from New Jersey culinary schools will assist the chefs and their culinary captains with prep work, cooking, plating and serving the dishes.
The independent juried culinary awards program is the only one of its kind in New Jersey to honor achievement and excellence in a variety of culinary arts enterprises in the Garden State. During the past year, the nine-member GSCA Awards Committee and a statewide body of some 150 judges mined New Jersey for candidates for consideration for the awards. After winnowing down the names in each category to 10 nominees, the committee and judges voted in a first round of independently tabulated balloting.
The top three vote-getters in each category have been deemed finalists; they are listed below. Following a second round of voting, the winners will be selected and announced at the gala ceremony on Sunday, April 29.

About Chef Justin Carlisle
Grew up on a small beef farm in rural Wisconsin and food has always played a large part of his life. Starting in small restaurants the passion for cooking grew and help developed a love of food and hard work ethic.
His restaurant Ardent - opened in October of 2013, has been named one of the 15 best new restaurants by Condé Nast Traveler; Best Restaurant in the State of Wisconsin by the Business Insider; and was named semifinalist for Best New Restaurant by the James Beard Foundation. PRINCETON, NJ – January 26, 2016 - The Arts Council of Princeton presents Down To Earth: Artists Inspired By The Elements, an exhibition of work by artists who are influenced by elements such as fire, wind, and earth. Visitors can expect original works from artists Olivia Jupillat, Paul Mordetsky, and Alice Sims-Gunzenhauser.
From working in a vineyard in Oregon, to managing a traditional wine shop in Princeton; to traveling overseas, Olivia Jupillat’s experiences have taken her work on an unexpected turn: “My fascination with root and earth structures stemmed from a brief introduction to viticulture and oenology in wine school, but fully emerged into an obsession once my studies were physically revealed in front of me and I could touch the sands, taste the dirt, and see the different strides in the rocks where ancient water once was,” explained Jupillat.
Artist Paul Mordetsky says he is drawn to “the landscape as a forum for representing space and light within the graphic language.” Of his paintings in Down To Earth, Paul describes how fire inspires his work: “Fire and smoke in the dark of night or in an encompassing timeless gray have been prominent aspects of these landscapes, and imply states of mind, passion, and inspiration rather than some apocalyptic vision. I find the notion of light in darkness to be a powerful and poetic image.”
Alice Sims-Gunzenhauser’s work has focused on the use of line. As her work has headed more towards abstraction, her line has “metamorphosed into a more general focus on mark making.” “Though some marks may be lines,” Alice explains, “they are freed from the need to describe an observed reference and become entities of a somewhat different sort. When marks, whether linear or otherwise, move in and out of suggesting intelligible form, the work is most alive for me.”
Down To Earth will be on view in the Arts Council’s Taplin Gallery from February 6-27, with an Opening Reception on Saturday, February 6 from 3-5pm. Chef Scott Anderson’s elements makes it much-anticipated debut in downtown Princeton.
Since first opening in Autumn 2008, elements has garnered the attention of national media and has received critical acclaim from The New York Times, Esquire, New Jersey Monthly, Wine Spectator, among others. The recent move to downtown Princeton proves that a year off only strengthened Chef Scott Anderson’s resolve to provide the best dining experience within the state, in what New York Magazine’s award-winning food blog Grub Street calls a ‘Michelin-caliber experience to suburban New Jersey.’
With just nine tables in the main dining room – all within view of the open kitchen – and seating for approximately 26 guests, the new space at 66 Witherspoon Street unites the front and back of the restaurant, allowing for the team to deliver against its promise of a heightened, unparalleled service for its guests.
Upon entry, your senses are sent dancing by the restaurant’s warm and welcoming décor – which features vaulted ceilings, exposed wood trusses and beams and exquisite use of natural light, including a Mondrian-glass wall at the front of the restaurant – and the aromas of the food being prepared by Anderson’s team of chefs in plain sight.
Each course – presented on earthenware plates and bowls commissioned by Rocky Hill, NJ artisan/potter John Shedd – is delivered tableside by a member of the kitchen team, accompanied by a brief explanation of the dish’s components. The team places a superlative focus on fresh, local ingredients, utilizing progressive, modern techniques to draw out an ingredient’s purest flavors in creating Anderson’s – named as a semi-finalist by the James Beard Foundation for the past three years for Best Mid-Atlantic Chef – trademark ‘interpretive-American’ cuisine.
The seasonally driven menu changes daily to feature the freshest ingredients, a majority of which is sourced from local farmers and producers so as to execute the best food possible. On weeknights, guests can choose from an offering of the chef’s tasting (ranging from 10-12 courses) and grand tasting (ranging from 17-22 courses; available with one-week prior notice) as well as a four-course prix-fixe a la carte menu. On weekends, a five-course tasting, the chef’s tasting or grand tasting menus are exclusively offered. As with the menu, the beverage pairing changes daily, with wine director Carl Rohrbach, DWS working with the chefs to identify beverages that work alongside the constructional components of each dish and best complement its flavors. As such, while rooted in wine, the beverage pairing may also feature beer, sake, craft-cocktails, broths, coffees and/or teas.

The Imitation Game, Wild and Birdman hit the theaters - all worth seeing
Holiday movies aren't all about fluff. Don't get me wrong, I like Elf and Love Actually as much as the next person (watched both this season, Elf for the first time!) but this year's holiday fare was meaty and well worth the escape in the cold and crowds.
First on my recommendation list is The Imitation Game, featuring the newly everpresent (out of nowhwere unless you watch Sherlock) Benedict Cumberbatch and equally everpresent Keira Knightley. Great ensemble cast, intriguing story, terrific acting by BC and historically important, both from the standpoint of the birth of technology as a winning weapon in WWII, ethical questions surrounding the use of this technology and timing, and also the tragedy of thwarting one's real self in the midst of prejudice and misunderstanding.
Wild is also at the top of my list, both for solid performances by Reese Witherspoon and Laura Dern as well as a gripping story and back story. REI is best supporting actor (great product placement?) and the scenery along the Pacific Crest Trail should also be nominated.
Finally, in the underdog category for an Academy Award, I'd like to see Michael Keaton win for Birdman. Reminiscent of Robin Williams' performance in The Fisher King, Keaton holds his own among Emma Stone, Naomi Watts and a slimmed down almost unrecognizable (but good) Zach Gallifinakis. Great stuff.

The Princeton Symphony Orchestra and Rossen Milanov Announce 2014-15 Classical Series Inspired by Elements of Romance!

Princeton, NJ—The Princeton Symphony Orchestra and Music Director Rossen Milanov are pleased to announce the 2014-2015 Classical Series which features concerts imbued with elements of Romance! Mr. Milanov will lead the respected professional musicians of the PSO in performances designed to stir the senses starting Sunday, September 28, at 4 pm, at Richardson Auditorium on the campus of Princeton University. The season focuses on works influenced by the emotional expressionism and new melodic styles of music’s Romantic Period, and features today’s hottest rising classical music stars. Hand-selected by Mr. Milanov, the young and passionate artists to appear with the PSO this coming season include violinist Bella Hristova, pianist Natasha Paremski, classical guitarist Robert Belinic, and cellist Zuill Bailey. Guest conductor Daniel Boico and local composer Sebastian Currier, Artist-in-Residence at the Institute for Advanced Study, will also be highlighted. Each 4 pm concert is preceded by a 3 pm concert talk to enrich the live concert experience.
“This season’s guest artists are musicians that I absolutely love working with. We share the same philosophy of music performance, bringing a strong and unique voice to everything we interpret together,” explains Rossen Milanov, who was recently named among the top 5 most influential people in New Jersey Arts by The Newark Star-Ledger’s Inside Jersey Guide. Mr. Milanov is accustomed to inspiring on-the-spot greatness from guest artists and established orchestras around the world. In addition to heading the PSO, Rossen Milanov is a touring conductor who raised his baton in 2013-2014 at performances in South Africa, Spain, Latvia, Denmark, Switzerland, Canada, Japan, Germany, and his native Bulgaria. Working with so many talented artists of varying cultural backgrounds, Mr. Milanov’s focus is always on a mutual, cohesive collaboration to bring vibrancy to performed works.
At the PSO’s Sunday, September 28, season-opening concert Romantic Imaginings, violinist Bella Hristova performs Max Bruch’s Violin Concerto No. 1 in G Minor. A fellow Bulgarian whom Mr. Milanov has known since she was twelve, Ms. Hristova delivers a passionate, beautiful sound with compelling command of her instrument. The remainder of the program is devoted to Anton Bruckner’s “Romantic” Symphony No. 4 in E-flat Major. This is the first Bruckner symphony to be undertaken by the PSO under the deft leadership of Mr. Milanov.
The Sunday, November 2 Edward T. Cone Concert Classically Russian includes the talented pianist Natasha Paremski performing Tchaikovsky’s Piano Concerto No. 1 in B-flat Major. In performance, the Russian-born pianist reveals astounding virtuosity and voracious interpretive abilities. The concert program also features Stravinsky’s Petrushka and a contemporary piece by living American composer William Bolcom, Commedia for “Almost” 18th Century Orchestra. Mr. Milanov met William Bolcom years ago at University of Michigan when they were both on faculty there. Mr. Bolcom’s Commedia mocks what a classical music piece might be and has a built-in theatrical element.
The third concert of the series on Sunday, January 18, Scenic Rhythms, features guitarist Robert Belinic performing Joaquín Rodrigo’s Concierto de Aranjuez. Mr. Belinic is no stranger to the PSO as he performed with virtuoso clarinetist José Franch-Ballester at a Spanish-themed PSO event in 2013 which showcased his dexterous classical guitar playing. Also on the program is Ottorino Respighi’s Trittico Botticelliano which pays homage to three iconic paintings by the Italian artist Sandro Botticelli. Beethoven’s Symphony No. 7 in A Major is rich with rapid dance-like rhythms, and will bring the afternoon concert to an exciting conclusion. Guest conductor Daniel Boico will lead the PSO. Mr. Boico is described by critics as "Dynamic, vigorous, exciting, and imaginative - an undisputed star who combines magnetic charisma with a skilled technique." Assistant Conductor of the New York Philharmonic for the 2009-2010 and 2010-2011 seasons, the fast-rising conductor has quickly made a mark on the music scene.
Cellist Zuill Bailey’s celebrated artistry, technical wizardry, and engaging personality will be on display at the Sunday, March 15, Soulful Reflections concert during which he’ll play Schumann’s Cello Concerto in A minor. Mr. Milanov points toward Zuill Bailey as a prime example of a universal musician, excelling as a soloist and chamber artist. As an encore, Mr. Bailey will perform Massenet’s “Meditation” from Thais, a solo normally associated with the violin. Parodying traditional symphonic form, Sebastian Currier’s Microsymph compresses the elements of a full symphony into just ten minutes. Mr. Currier will discuss his work at a PSO Behind the Music event to be held in advance of the concert as well as during a pre-concert, on-stage talk with Rossen Milanov. Jean Sibelius’ Symphony No. 1 in E Minor completes the program with its expressive fusion of romantic content with classical form.
The Viva Verdi! concert brings the PSO Classical Series to an end on Sunday, May 17 with memorable excerpted scenes from three popular Giuseppe Verdi operas including Il Trovatore, La Traviata, and Aida. Emerging opera guest stars, to be determined, will perform with the PSO under Rossen Milanov. The program is filled with drama, emotional tension, longing, and, of course, tragic endings—quintessentially romantic!
New subscriptions to the five-concert 2014-2015 PSO Classical Series are available beginning Tuesday, July 1. All concerts will take place at Richardson Auditorium in Alexander Hall on the campus of Princeton University. ABOUT MUSIC DIRECTOR ROSSEN MILANOV
Princeton Symphony Orchestra Music Director Rossen Milanov has been recognized as “one of the most promising figures in the upcoming generation of conductors” by The Seattle Times and “one who bears watching by anyone who cares about the future of music” by the Chicago Tribune. He began his tenure with the PSO in June 2009. Mr. Milanov is former associate conductor of The Philadelphia Orchestra and former artistic director of The Philadelphia Orchestra’s series at the Mann Center for the Performing Arts. In February 2012, he was appointed principal conductor of Orquesta Sinf?nica del Principado de Asturias in Oviedo, Spain. As a committed supporter of music education, Mr. Milanov is music director of both the New Symphony Orchestra, a youth orchestra in his native city of Sofia, Bulgaria; and Symphony in C, one of the leading professional training orchestras in the United States. Mr. Milanov studied conducting at The Juilliard School, the Curtis Institute of Music, Duquesne University, and the Bulgarian National Academy of Music. He has received the Award for Extraordinary Contribution to Bulgarian Culture and in 2005 was chosen as Bulgaria’s Musician of the Year.

Whether performing classical masterworks, introducing music by modern-day masters, or hosting students at their first live symphony performance, the Princeton Symphony Orchestra (PSO) is a cultural centerpiece of the Princeton community and one of New Jersey’s finest music organizations. “Farm to Fork” Dinner Series Launches this Summer

Chef Scott Anderson of the award-winning elements restaurant in Princeton, New Jersey and Zone 7, a farm distributor that transports fresh ingredients to restaurants in New Jersey and Pennsylvania, are pleased to introduce the “Farm to Fork” summer dinner series.
Each week, elements will partner with two to three different local farms to construct a delectable and original three-course meal, available every Monday through Thursday evening until Labor Day. Proving that decadent dining doesn’t have to break the bank, elements will offer this special dinner at the price of $39.
Chef Anderson and the elements team routinely focus on locally grown, sustainable products to create “interpretive American” dishes, making this dinner series a natural extension of their normal creative process. Designed to raise awareness for local New Jersey and Pennsylvania food sources, the series will enable diners to connect with the farmers who produce the food they consume. Foodie Fridays, a five course-tasting menu ($69) presented every Friday at elements in Princeton, is gaining rapid popularity for its daily procured ingredients and seasonal flavors.
With updated menus each Friday, Anderson’s inventive courses currently play off the taste of spring. Recent sample menus have included dishes like New Jersey Lamb with sweet potato, maitake, and celery, Long Island Surf Clam with pickled radish, and citrus aioli, Sweet Maine Lobster with warm ginger scallion custard and Day Boat Scallops prepared with parsley, potato, and crab. Their new spring lunch menu, available Monday through Friday from 11:30am to 2pm, features the enticing new flavors of the spring season as well as a different take on lunch with their “You Pick 2 for $22” menu beginning on Monday, April 4th.
Delivering on the restaurant’s philosophy of adventurous dining with fresh ingredients, Chef Scott Anderson’s latest creation allows you to mix and match! We all crave a culinary indulgence to wind down from the grueling work week. elements in Princeton has recently introduced Foodie Fridays, a five-course tasting menu ($69) featuring the day’s specially procured ingredients. Each Friday, Executive Chef Scott Anderson will choose fresh ingredients to create deliciously seasonal dishes, which will offer that much-needed break from making the decisions.
With a philosophy that dares you to try the unfamiliar, much of what Chef Anderson does at elements is based on that day's available ingredients, creating adventurous dishes that are meant to educate the clientele on how to savor the season. His unique seasonally-inspired menu for Foodie Fridays offers gourmands five courses ripe in flavor. elements turns 2 this month and is hosting a month-long birthday celebration. Throughout October, Chef Scott Anderson will take diners on a seven-course tasting gastronomic journey, featuring some of the most popular dishes of the year thus far. The menu will rotate throughout the month, reflecting Chef Anderson’s relentless passion for fresh ingredients and focus on interpretive American cuisine. Some of the noteworthy and innovative dishes created for the celebration include Squash Soup with an intriguing combination of caraway ice cream, corned beef, and cabbage and Local Skate with a mouth-watering mélange of pumpkin, raisin, curry, cauliflower, and almond. Diners are also invited to toast to elements’ success with a complimentary glass of bubbly.
The tasting menu is available all month at $85 per person; for an extra $40, you will be treated to expert wine pairings designed to seamlessly meld with the intricate flavors of each dish. Consistently regarded as one of New Jersey’s Top 25 Restaurants, elements has been providing diners with unforgettable experiences since its inception. Opened in the autumn of 2008, the restaurant continues to provide outstanding cuisine inspired by the farm to table mantra. If you are one of those people who thinks about brunch all week long, it doesn’t get any better than Sunday Brunch at elements (163 Bayard Lane, Princeton, NJ 609.924.0078, www.elementsprinceton.com). The farm to table restaurant has developed a loyal following and is described by many as the ultimate “not-to-be-missed” brunch destination. While some restaurants prefer not to serve a special brunch menu, elements embraces it. The restaurant believes there are many people who look forward to spending Sundays with good friends over a leisurely brunch. Like their lunch and dinner menus, elements' brunch dishes use only the freshest, locally grown ingredients and are interpretive takes on brunch favorites.
The elements’ brunch encourages diners to mix up flavor profiles with each course; this meal is a substitute for breakfast and lunch, after all. All rules are off. Start with the savory local radish salad with pesto, cavatelli, herbs and goat cheese and then indulge in the french toast served with vanilla ice cream, candied pecans and maple syrup. Or work backwards and opt for the local ricotta and asparagus salad, with yogurt, granola and citrus followed by the corned beef hash made with house cured beef, local potato, foie gras and hollandaise. elements in Princeton, NJ was highlighted for its variety of over 100 types of vegetables, herbs, greens, and fruits, most of which are locally grown. Executive Chef Scott Anderson explains that what makes elements so unique is the staff’s tendency to compose dishes starting with the produce rather than protein, unlike most other restaurants. This results in an ability to be more creative and a menu that is anything but static. This culinary style also allows the chefs at elements to create dishes that are adventurous, intriguing, and most importantly, fun. Anderson prides himself on taking unique twists on classic favorites, putting forth dishes such as Spaghetti Carbonara with bacon, peas and duck egg, 48-hour Short Ribs with tomato, basil, balsamic and bread, and Scallop Corndogs with local cornmeal, jalapeno, and lobster fondue.
Ninety Acres, ensconced in Somerset County’s Natirar Park, is situated upon 491-acres of land, which includes 19-acres of farm. It is the proximity to freshly grown vegetables that lured Executive Chef David C. Felton away from his duties at Pluckemin Inn and onto the land that once belonged to the King of Morocco. With the ability to pick his own vegetables, Felton honors them with preparations that delight in lively flavor combinations like Bacon-wrapped quail with cocoa, Seckle pear, beets, and sherry, or a subtle Soup of cauliflower and salsify sparked with curried shrimp, capers, and raisins. The unique multicourse tasting menu changes daily and is offered alongside an à la carte menu. With the ability to source his own ingredients, Felton explains, “There are so many opportunities for a chef to hit every creative nerve here.”

“Farm to Table” is tossed around often these days but OUTSTANDING IN THE FIELD events take the concept quite literally. For the second year in a row, Chef Scott Anderson of the award-winning elements restaurant has been invited to participate in this unique program this fall. The organizers travel coast to coast, inviting local chefs to create impromptu “restaurants without walls” at different farms across the country. The event is designed to offer diners the chance to connect with their food and appreciate the local farmers and artisans who cultivate it.
On September 4, Chef Anderson, known for his inventive transformation of the bounty of local, seasonal ingredients into complex dishes, travels to Mosefund Farm in Northern New Jersey to prepare a special menu.
Guests arrive at the farm, tour the property with the farmer, and then everyone (farmers, producers, chef, and diners) sits down at a long table to an al fresco family-style meal incorporating the farm’s gifts. The meal is intended to be spontaneous and of the season; ingredients are almost all local and often sourced within fingertips’ reach.
At the restaurant, Chef Anderson and his team focus on locally grown, sustainable products to create their “interpretive American” dishes so this dinner event is a natural extension of their normal creative process. A proponent of high quality, humanely raised products, Mosefund is celebrated for their Mangalitsa pigs, a rare breed praised for its fat and well marbled meat. The same tasting menu Chef Scott Anderson will prepare for diners at the famed James Beard House will be available at elements from Monday, July 12 through Sunday, July 18, so local diners have the opportunity to sample this special menu in Princeton. Recently proclaimed “excellent” by The New York Times, reviewer Karla Cook recognizes the restaurant for making “a consistent effort to use local and sustainable ingredients and maintains high standards in the kitchen and dining room – and does so at fair prices.” These local products and ingredients will be highlighted on Chef Anderson’s summer themed menu.
