“Farm to Table” is tossed around often these days but OUTSTANDING IN THE FIELD events take the concept quite literally. For the second year in a row, Chef Scott Anderson of the award-winning elements restaurant has been invited to participate in this unique program this fall. The organizers travel coast to coast, inviting local chefs to create impromptu “restaurants without walls” at different farms across the country. The event is designed to offer diners the chance to connect with their food and appreciate the local farmers and artisans who cultivate it.
On September 4, Chef Anderson, known for his inventive transformation of the bounty of local, seasonal ingredients into complex dishes, travels to Mosefund Farm in Northern New Jersey to prepare a special menu.
Guests arrive at the farm, tour the property with the farmer, and then everyone (farmers, producers, chef, and diners) sits down at a long table to an al fresco family-style meal incorporating the farm’s gifts. The meal is intended to be spontaneous and of the season; ingredients are almost all local and often sourced within fingertips’ reach.
At the restaurant, Chef Anderson and his team focus on locally grown, sustainable products to create their “interpretive American” dishes so this dinner event is a natural extension of their normal creative process. A proponent of high quality, humanely raised products, Mosefund is celebrated for their Mangalitsa pigs, a rare breed praised for its fat and well marbled meat.
