Chateau Chabiran Bordeaux Superieur 2007
A Corkscrew Favorite!
I have been working with Chateau Chabiran since I opened my doors 15 years ago. Francis Carayon, winemaker of Chateau Chabiran, consistently delivers a product that is terroir driven, beautifully crafted, and extremely drinkable. Vintage after vintage, the wine continues to be a crowd pleaser and one of my personal favorites.
From the beginning, I have always thought of Chateau Chabiran as a baby Pomerol. The Chateau lies on a high plateau just outside of Fronsac on the right bank of Bordeaux. Planted predominantly to Merlot with a touch of Cabernet Sauvignon, the vines flourish on the local terroir of blue clay and red gravel soil. The vineyards have exceptionally good drainage and yields are kept very low, as to encourage maximum extraction of the soil's minerals and enhance the complexity of the wine. Fermentation occurs in both stainless steel and cement tanks with a long maceration followed by aging in both barrel and tank.
Sur la table...
With these cooling nights, this is a great wine to bridge the gap between summer and fall. Juicy fruits, velvety tannins, and a bouquet that is complex and intriguing.
Enjoy this wine with the last BBQs of summer, a steak off the grill, or sipping while enjoying the cool evening air.
