Random Soup

Yes, this is a random soup from Random Scoop. With all the snow, delayed openings and more on the way it seems to be a perfect time to share this gem. I don’t recall if the great blizzard in NYC that brings this soup to mind was in 1996 or 1993, but I do remember that as the snow fell my roommate and I decided to go against the tide. Rather than running to the market to stock up on supplies, we wanted to see what we could muster together with what we had on hand. Oddly, our refrigerator offered up only two options; Homemade corn chowder and fresh baked blueberry scones, plus beer of course. I always hated corn chowder until that day, and this soup. We ate like royalty.
It looks like some wintry mix is on the way so may I encourage you to give this recipe a try if we all get locked in. And put your January dietary goals aside for a moment.
Roasted Corn Chowder with Potatoes and Bacon
7 ears corn husked (frozen corn is fine)
1 large red bell pepper
3 bacon slices diced
1 ½ cups finely chopped onion
2 tbls flour
4 ½ cups chicken broth
2 large russet potatoes, peeled and diced
1 ½ cups half and half
2 tbls chopped chives or green onions
Cook your bacon til crunchy. Saute the onion and butter and when golden sprinkle in the flour and stir 2 minutes. Gradually mix in the chicken stock. Add potatoes and simmer until tender (10 mins). Stir in corn, chopped pepper and half and half. Simmer until chowder is slightly thickened, about 20 mins. Season with salt and pepper. Garnish with chives, which there is no way we had in our fridge during the blizzard.

Sounds Terriffic - but what were you doing with 7 ears of corn in your fridge in the middle of winter?
ah, but if you had read the recipe closely it says that frozen corn is fine.
