Turkey Day Reheating Instructions and Ingredients from Brick Farm Market





MAPLE GLAZED SWEET POTATOES butter, brown sugar, maple syrup, cinnamon, allspice, potato  starch, salt, pepper  - pecan crumble brown sugar, flour, butter, pecans, oatmeal,  rosemary  - REHEAT 350 degrees uncovered, 20 minutes
ROOT VEGGIE SMASH parsnips, rutabagas, turnips, sweet potato, potato, butter, milk, sage, brown sugar, salt, pepper - REHEAT 350 degrees uncovered, 20 minutes
HERB AND BUTTER STUFFING - bread cubes (a mixture of different kinds of breads including ones that contain whole grains, olive oil, egg, and dairy) carrots, celery, onions, butter, vegetable stock, herbs, salt, pepper - REHEAT 350 degrees uncovered, 20 minutes
SAUSAGE AND APPLE STUFFING - bread cubes (a mixture of different kinds of breads including ones that contain whole grains, olive oil, egg, and dairy) carrots, celery, onions, sweet Italian sausage (pork, salt, spices), apples, butter, vegetable stock, herbs, salt, pepper - REHEAT 350 degrees uncovered, 20 MINUTES
ROASTED ACORN SQUASH acorn squash, brown butter, cinnamon, nutmeg, allspice, salt, pepper, sugar, pumpkin seeds, egg whites, bbq spice.  - REHEAT 350 degrees uncovered, 20 minutes
SPINACH PARMESAN spinach, milk, flour, butter, parmigiano reggiano, bread crumbs, herbs (nutmeg, garlic) - REHEAT 350 degrees uncovered, 20 minutes
BUTTERNUT SQUASH & Apple EMPANADAS  - filling - butternut squash, apples, herbs (sage , rosemary), garlic, brie cheese, crust -flour, water, butter, egg, salt, sugar - REHEAT 350 degrees uncovered, 15  minutes
MASHED POTATOES potatoes, milk, butter, salt, pepper REHEAT 350 degrees, keep covered with aluminum, 20 minutes
TURKEY GRAVY - turkey bones, carrot, celery, onion, garlic, herbs (sage, rosemary), gluten free flour, butter, salt, pepper
MAC N CHEESE - elbow macaroni, milk, butter, flour, American cheese, salt, pepper, bread crumbs, herbs, garlic. - REHEAT 350 degrees uncovered, 20 minutes for an individual size and 45 minutes for a full pan
ALMOND STUFFED Bacon Wrapped DATES dates, whole almonds, bacon, Belgian endive, blue cheese, mayo, yogurt,  worcestershire, herbs, garlic – to reheat - remove bacon wrapped dates from the endive and heat for 10 minutes at 350 degrees, place back on the endive cups
HUMMUS PLATTERchickpeas, sesame paste, extra virgin olive oil, garlic, cumin, coriander, vinegar, salt, pepper, pickled vegetables (carrots, cauliflower, peppers, olives, red onion, vinegar, salt, sugar, mustard seed, bay leaves, allspice, chiles, fennel seeds)
SPICED APPLE CRANBERRY SAUCE cranberries, apples, port wine, orange juice, orange zest, spices, potato starch (to thicken) cranberry juice, sugar
MOZZARELLA & PROSCIUTTO - fresh mozzarella cheese, roasted peppers, prosciutto, basil pesto (basil, garlic, parmesan cheese, sunflower seeds, olive oil)
ANTIPASTO - organic baby lettuces, roasted organic peppers, and organic onions, marinated artichokes, olives, house made salami (salt, pork spices, nitrates), provolone cheese, pickled mixed vegetables (vinegar, cauliflower, bell peppers, onion, garlic) Ready to serve
PIES AND CHEESECAKE – all of our Thanksgiving cheesecakes and pies contain dairy and eggs.  The pecan pie contains pecans and potentially trace amounts of other nuts.  All of our baked goods are made in a bakery with flour, nuts, dairy and eggs present.
TURKEY PREPARATION – Double Brook Farm Thanksgiving turkeys are fresh and do not require a brine.  Should you choose to brine your turkey we recommend a dry brine vs a wet brine.
TURKEY ROASTING – roast your turkey in a 325 degree oven until the lower thigh temperature is 165 degrees.  If you stuff your turkey ensure your stuffing has reached 165 degrees as well.  Allow the turkey to rest for 15 minutes prior to carving.  Cooking times will depend on oven calibration, convection, stuffing, brining and entry temperature.   a rule of thumb is 15-20 minutes per Pound.
SMOKED TURKEY - Reheating Instructions - place turkey in a roasting pan, add 1 quart of chicken stock or water to the bottom of the pan, build a "tent" over the turkey with aluminum foil. Place in a preheated oven at 250 degrees and cook for 4 hours. Remove from the oven and serve. The juices from the bottom of the pan will make a great gravy!
